Menu for March 17-23 and March 24-30

March 17-23
Monday-- Teriyaki Pork Chops (we never had it last week, for some reason), couscous, and green beans

Tuesday--Roasted potatoes, chicken sausage, and peppers, zucchini and carrots in coconut oil and pink Himalayin salt

Wednesday-- Mexican Casserole, salad

Thursday-- Cheeseburger Wraps, sweet potato fries, roasted broccoli

Friday-- Pizza Bake

Saturday-- No clue!  I will not be cooking! :)

Sunday-- Chicken Philly Sandwiches (and whatever else I find)

March 24-30
Monday--Chicken Cacciatore, salad, roasted cauliflower

Tuesday-- Italian Chicken (just baked chicken with Italian bread crumbs), mac and cheese, peas

Wednesday--Chicken broccoli alfredo

Thursday-- Cheesy Chicken and Rice

Friday-- Mini Corn Dog Muffins

Saturday/ Sunday--  Don't know.  Don't care.  I have been sitting at this computer in the living room floor for 2 hours.  Granted, I've also been watching General Hospital, stopping to move wet clothes into the dryer, deal with the kiddos, etc. etc.  BUT.  I am over this.  I spend entirely too much time making these menus!  Like I become obsessed with finding new stuff but, every website starts to look the same.  Or just another version of something else I've already had before.  I will be glad I did this during the week, but right now I need to go clean or something.  Do something more productive.  :)

Notice that she doubles every recipe.  I don't do that.  Just because I don't like to repeat meals that soon. So, just make sure you either split the ingredients like she does, or divide everything in half for just one meal.

This is super easy to make.  We will have it on Tuesday night since Monday, Wednesday, and Thursday are busy.  The ingredients are listed below.  If you want the full recipe, click the link above.

Ingredients:
  • 1.5 lb (about 3 large) potatoes, russet or new
  • 1 medium onion, peeled and quartered, layers separated
  • 2 red bell peppers, seeds removed and cut into 1 inch pieces
  • 2 tsp extra virgin olive oil
  • kosher salt and fresh cracked pepper to taste
  • 1 tsp chopped rosemary (fresh or dry)
  • 1/2 tsp garlic powder
  • olive oil spray (I use my Misto)
  • 1 lb Italian chicken sausage (al fresco's) cut each link into 6-7 slices

My Prep for the Week

I spent 4 1/2 hours in the kitchen today.  I know it seems crazy but the more I do now, the smoother my week will go.  Anyhow... here's what I did today, along with the freezer meals.


We make a pitcher of juice at night to have with breakfast and lunch the next day.  So, I cut up collards and mixed them with kale. I ended up with 3 containers, and still have half of the bag of kale left over.  When I make the juice at night, I will use the greens from these containers.



I cut up carrots, celery, and green peppers and put them in a container.  We can snack on them, or I will add them to our lunches this week.

I made a salad for my lunches this week with spinach, carrots, celery, and green peppers. I can't have a salad every day.  Gets boring.  So I just divided it into three containers.  I will find something else for the other two days.

I made No Bake Energy Bites.  Carter loves these in his lunch.  Adam eats them for breakfast.

I also made homemade pizza dough for dinner.  Disgusting.  Won't try that again.  It was so thick.  Harper said, "Mama!  Why you put bread on dis pizza?!"  :)

I had to make more taco seasoning.  Look at how pretty it is before you shake it up.  Yes, I took a picture of my taco seasoning.  This is what happens when your home alone with the crazies all day.  And don't have another adult to talk to.


OH!  I made these too!  This is my favorite just-because-it's-clean-doesn't-mean-it's-good-for-me-snack.  I don't have a picture.  I could go get one, but I'm lazy and don't want to get off the couch.  Anyhow.  Try them!  No-Bake Candy Bars! :)

Monday-- Slow Cooker Pepperoni and Chicken (This was on the menu for last week, but for some reason we never ate it), salad, fruit (whatever I find on sale at the store!)

Tuesday--Paleo Tex Mex Casserole 

Wednesday--Teriyaki Pork Chops, cauliflower "rice," carrots

Thursday--Coconut Curry Chicken, Roasted veggies with coconut oil and pink Himalayan salt, mac and cheese (for the kiddos)

Friday-- Pizza wraps and salad

Saturday-- ??

Sunday--Sweet and Sour Meatballs, broccoli, organic corn

March 10-16
Monday--Sweet Garlic Chicken, salad, mac and cheese (for the kiddos)

Tuesday--Sloppy Joes, Homemade Sweet Potato Fries, Roasted Broccoli with coconut oil and pink Himalayan salt

Wednesday-- Pulled Pork Sandwiches, (we won't add the bread), carrots and zucchini, couscous

Thursday-- Taco night! (Using this recipe for the seasoning)

Friday, Saturday, Sunday-- No clue!  But, by then, it will be time for a new menu! :)

Sweet and Sour Meatballs

Sweet and Sour Meatballs

1 pkg cooked meatballs
1 diced onion
1 cup diced green pepper
1 cup diced red pepper
1 bottle sweet and sour sauce
add one hour before serving
1 can pineapple tidbits

4 hours on low

Add all ingredients to a gallon size freezer bag, except for the pineapple.  
Add pineapple one hour before serving.  

The problem with this one, for us, is it says to cook on low for 4 hours.  We aren't home to turn off the crock pot.  Even though mine switches to "warm," it will be sitting on warm for several hours.  So, I will use this next weekend.

Coconut Curry Chicken

I've never tried this, but it sounds good.  Adam is kinda over the whole crock-pot-3-nights-a-week-thing, so I'm trying to add new stuff to our menus.

5-6 chicken breasts
1 cup diced carrots
1 cup diced celery
1 cup diced red pepper
2 tsp minced garlic
1 tsp minced ginger
2 Tbsp red curry paste
1 tsp coriander
1 tsp cumin
1 can coconut milk

8 hours on low
6 hours on medium
4 hours on high

Add all ingredients to a gallon size Ziploc bag.  
Thaw out the night before.
Place in the crock pot in the morning! :) 


I had no clue what curry paste was...but I found it!  It smells amazing!  
And I didn't have any coriander.  And I couldn't find any at the store.  So, I just left that out.  Eh.  It will be fine! :) 
Oh!  My "minced ginger" was ground ginger.  I just sprinkled some in the bag.  :)




Paleo Tex-Mex Casserole (Not a Freezer Meal)

Another Pinterest find!  I haven't tried this yet, but it looks good!

Since this isn't a freezer meal, we are gonna have it on Tuesday night (the only night that we don't have anything going on after school).  On Sunday, I will chop the veggies and shred the sweet potatoes.  That will save time on Tuesday.

Ingredients:
1 – 1.5 pounds grass-fed ground beef
2 cups spinach
2-3 carrots, diced (about a cup)
1 parsnip, diced (about a cup and a half)
1 zucchini, diced (6″ zucchini/one cup)
2 cups diced bell peppers
3-4 cloves garlic, minced
14.5 oz can organic diced tomatoes
3 TBSP preferred Paleo-friendly fat (I used bacon grease)
1/3 cup taco seasoning (or make your own)
1/2 tsp sea salt
5 cups shredded sweet potatoes
1/2 cup coconut oil, melted
1/2 tsp onion powder
1/2 tsp chili powder
1/2 tsp ground coriander
Optional garnish: fresh cilantro, sliced scallions, avocado and hot sauce
