Jennifer Aniston Salad

Ingredients:

  • 1 cup uncooked quinoa - the original recipe uses bulgar
  • 1 cucumber
  • 1/2 cup parsley
  • 1/2 cup mint
  • 1 can chickpeas
  • 1/2 cup chopped pistachios
  • 1/2 cup crumbled vegan feta 
  • 1/2 a small red onion
  • Juice of 2 lemons
  • 2 tbsp olive oil
  • Salt & pepper

  1. Cook quinoa
  2. Chop veggies 
  3. Toss to combine
