Ingredients:
- 1 cup uncooked quinoa - the original recipe uses bulgar
- 1 cucumber
- 1/2 cup parsley
- 1/2 cup mint
- 1 can chickpeas
- 1/2 cup chopped pistachios
- 1/2 cup crumbled vegan feta
- 1/2 a small red onion
- Juice of 2 lemons
- 2 tbsp olive oil
- Salt & pepper
- Cook quinoa
- Chop veggies
- Toss to combine
