Heeeyyy! Back to life... back to reality...
I have been back to work for 2 weeks now because I helped with our LEAP days. Anyhow. Y'all. The struggle is real. After being at home for 6 months... I "lost" all of my meal prepping routines. So, I'm trying to ease back into this meal prep life slowly.
During the quarantine, I switched our Misfits Market delivery to every other week instead of every week. Therefore, I don't have a Misfits delivery for this week to include in my meals. I picked up my groceries Thursday after school. As I was unpacking, I soaked, washed, and dried my fruits and veggies. Yesterday after school, I cut up my veggies for the week, used last week's leftover veggies to make an egg bake for breakfasts for this week, and made chicken salad to use in lunches.
So, today my plan is:
- Chop and prep lettuce
- Make lunches for Adam and I
- Cut up the egg thing and put it in containers for our breakfasts
Saturday, August 29-- Hamburgers, french fries, veggies
Sunday, August 30-- Shrimp boil
Monday, August 31-- Three Cheese Baked Penne
Tuesday, September 1-- Quinoa fiesta enchilada bake, salad
Wednesday, September 2-- Instant Pot Pork tenderloin, green beans, roasted veggies
Thursday, September 3-- Chicken sausage and vegetable skillet, salad
