Sunday, September 1-- Sundays are for total cheat meals!
Chicken and dressing, with lima beans
This is one of Mama's recipes:
1 can cream of chicken
1 can cream of celery
1 bag Pepperidge Farm Herb Seasoning Stuffing
1 can chicken broth
Cooked chicken
1 stick of butter (soften)
Mix butter, soups, stuffing and half can chicken broth. Then add chicken. Add more both if needed.
Bake at 350 for 45-50 minutes
Monday, September 2-- Eggplant Parmesan
Tuesday, September 3-- Sesame Chicken Chopped Salad
(I just buy a bag of coleslaw mix instead of the separate cabbages and stuff like the recipe calls for. Because, again, it's called survival!)
Wednesday, September 4-- Chicken and Cabbage Stir Fry
Thursday, September 5-- Instant Pot Cilantro Lime Chicken with cauliflower rice
Prep for the Week:
- Cut up fruits/ veggies for the week
- Make lunches for Adam and I
- Prep fruits/ veggies for kids' lunches
- Make Chicken Avocado Egg Salad
- Use last week's leftover veggies and eggs to make breakfast casserole thing
Meal Prep containers that I use:
- Kids' divided containers for their lunch fruit and veggies
- 3-compartment containers for our lunches
- Divided container for our fruit/ veggie trays
